Poached Egg Avocado Toast

Ingredients

  • 4 slices – Sourdough Bread
  • 2 – avocados
  • 1/4 – purple onion
  • 1 – small lime
  • 3 tbsp – chopped cilantro
  • 1 – roma tomato
  • 4 – eggs

Directions

  1. Get a bowl and squeeze the juice from half of a lime in there
  2. Take your seasoning of choice, we recommend some garlic salt and mix with the lime juice
  3. Cut open and scoop out the avocado into the bowl and start mixing it together with the lime juice
  4. Add the diced onion, diced tomato, and cilantro into the bowl. Do not over mix.
  5. Boil a pot of water
  6. After boiling, bring down the temperature of the water
  7. Gently place the eggs separately into the pot. Do not drop hard into the water.
  8. Cook for 3 and a half minutes
  9. Get a large slotted spoon to remove the egg and place them on a paper towel-covered plate. Let them cool on the plate for a bit.
  10. Take a slice of sourdough bread and toast it.
  11. Spread the guac mixture on top of the toast
  12. Add the poached egg on top with a pinch of salt and pepper
  13. Hot sauce optional
