YIELD: 2 TO 4 SERVINGS
One of my favorite treats is chocolate pudding. I love how involved it all seems, standing over the stove, meditatively whisking away. This pudding is just as great as other Chocolate Puddings that we know and love with its thick and creamy texture and an unforgettably chocolate flavor.
Directions
In a 2-quart saucepan, whisk together the cocoa powder, sugar, vanilla extract, salt, and about â…“ cup of the non dairy milk.
Mix until very smooth with no lumps remaining, and then add in the additional non-dairy milk.
Warm over medium heat.
In a small bowl, whisk together the cornstarch and water until no lumps remain.
Stir in the cornstarch slurry and keep stirring continuously, over medium heat, until thickened, for about 5 minutes.
Transfer to two medium or four small dishes and chill before serving.
Store in an airtight container for up to 1 week in the refrigerator.
