A perfect pick-me-up for after dinner, or for a quick bit of fuel on the run, these little morsels taste just like raw cookie dough.
Directions
In a food processor, pulse the cashews and dates until crumbly.
Add in the vanilla extract, almond meal, salt, and cacao nibs and pulse until finely ground and dough comes together easily when pinched with fingers.
Shape into small balls about 1 inch in diameter.
Store in an airtight container for up to 2 weeks.

Dash salt
